This spaghetti recipe with zucchini in a homemade tomato sauce is low carb and healthy and can be cooked for the whole family.
Ingredients for one serving
- 1 Tbsp Ajvar
- 1 Tbsp basil
- 8th Pc Cherry tomatoes
- 1 Tbsp cream cheese
- 1 Pc clove of garlic
- 1 Tbsp olive oil
- 1 prize pepper
- 1 prize salt
- 1 Pc zucchini
- 1 Pc onion
Method:
- The zucchini spaghetti with tomato sauce, first, turn the zucchini into thin spaghetti using a spiral cutter. Peel the fresh onion and cut into fine strips. Then peel and finely chop the clove of garlic.
- Now sauté the onion and garlic cubes in a pan with a little olive oil for about 3 minutes until translucent. Stir in the creamy cream cheese and ajvar, simmer for about 3 minutes.
- Now stir the zucchini spaghetti into the sauce, sauté for about 5 minutes, and season well with salt and pepper.
- Then wash the cherry tomatoes, cut them in half, and stir into the sauce—season to taste with basil and serve immediately warm.
