Make your own vanilla sauce – that’s how it works

Mmmmhh, vanilla sauce tastes too good – especially with apple strudel, yeast dumplings and red fruit jelly! We explain the simple preparation step by step. That’s how it’s done!

It takes little time to make the vanilla sauce yourself and the shopping list is clear. It is traditionally heated over a water bath. This has the advantage that the egg does not curdle and the sauce does not burn. You can also prepare vanilla sauce directly in the pot. We present both types of preparation.

Prepare the vanilla sauce over the water bath

Ingredients for approx. 4 servings:

  • 1/2 vanilla pod
  • 125 ml of milk
  • 125 g whipped cream
  • 25 g of sugar
  • 1 egg (size M)
  • 1 egg yolk (size M)

This is how it works step by step:

  1. Cut the vanilla pod lengthways and scrape out the pulp. Bring the milk, cream, sugar, vanilla pod, and pulp to the boil in a saucepan while stirring. Remove the vanilla pod.
  2. Mix the egg and 1 egg yolk in a metal bowl with a whisk. Pour in the vanilla cream. Heat on a hot water bath to approx. 80 ° C, stirring constantly, until the sauce thickens.
  3. Custard through a sieve happen, let cool and enjoy.

Make your own vanilla sauce in the pot

Ingredients for approx. 4 servings:

  • 15 g cornstarch
  • 1/2 l milk
  • 30 grams of sugar
  • 1 pinch of salt
  • 1/2 vanilla pod
  • 2 egg yolks

This is how it works step by step:

  1. Mix the cornstarch with a little milk until smooth. Put the rest of the milk, sugar, and salt in a saucepan. Cut the vanilla and scrape the pulp into the milk. Add the pod to the milk and bring to a boil. Stir in the cornstarch and cook for about 1/2 minute.
  2. Take the sauce off the stove. Now add some hot sauce and egg yolks and then mix the egg yolks with the hot sauce. Remove the vanilla stick. Serving.

What goes well with vanilla sauce?

Homemade vanilla sauce is really versatile. It goes well with sour fruits but is also a must with classic pastries. It gets twice as creamy when you serve the vanilla sauce with chocolate pudding.
